Useful Tips to Prepare Dosa

1. If you are using instant dosa mix, it is stick proof. Even a child will be able to get the dosa off the pan in a jiffy. But if it gets stuck you can add a bit more of the mix and make it thicker. This will help you easily flip the dosa.
2. If you are making dosa in the usual way, the long process of soaking, grinding and fermenting, add a few tbs of all round flour. It is better to add rice flour but you can add your regular flour. No problems. Dosa will come off in good healthy shape.
3. Dip the spatula in cooking oil. Pass it through the edges of the dosa. Slowly and gentlly relieve the dosa that is attached to the pan with ever lasting love :). Then fold it in one sweep and flip it. You have done what the usual Indian parents do when they catch their daughters deep in love.
4. Cut an onion in the middle. Give the pan a nice massage with the onion and it will be ready to accept the next ladle full of dosa batter and be ready to let go of your dosa without a murmur.
5. Roll a tissue paper into a ball, dip it in water, squeeze it out and then rub the top of the pan.

01: Cochin

Day 02: Cochin - Munnar
On this second day of Indian food tours, the morning gets started with a delicious traditional Kerala breakfast Check out the hotel and proceed to Munnar. On arrival,
check into hotel. Later proceed for sightseeing of Munnar. Munnar is a verdant paradise situated at the confluence of three mountain streams and Kundala. Sprawling tea plantations, picture booktowns, winding lanes, trekking and holiday facilities make Munnar a unique experience. Visit to Attukkadu Water Falls. Later drive to Eravikulam National Park, the best place to see the Nilgiri Tahr (mountain goat). The altitude varies from about 1,400m on the valley floor to Anaimudi peak at 2,695m, the highest peak in Nilgiris and south of the Himalayas. The ideal location to catch up on your memories.

Morning breakfast is Puttu with kadala curry and fish curry, Vegetable soup. Puttu is made out of rice flour with plenty of coconut pieces. Vegetable soup, it is served with kadala curry and fish curry. The dish has to be made with lot of coconut.
In this afternoon Hot Lamb Masala, Coconut Fish fry, Spicy Baby Crabs, Rasam, Appam parboiled rice, and vada, payasam.
Day 03: Munnar - Periyar
After taking the delicious Kerala special foods for breakfast check out the hotel and drive to Periyar. On arrival at Periyar, check into hotel. Visit to Periyar National Park. If you are fortunate you might as well spot a tiger in its natural habitat. Trekking with a local guide familiarizes you to the rare birds, and the local vegetation. Trekking through spice plantations with the accompaniment of the heady fragrance of spices is a lifetime experience. A boat safari on the Periyar Lake preferably at dusk extends a lifetime's chance to spot exotic wildlife in its natural habitat - like the eccentric bathing habits of the wild elephants and other big and small sport that come down to the lake to drink from it. Later visit to Periyar Wildlife Sanctuary (Open 0600 - 1800 hrs), Kumily, Murikkady, Pandikuzhi, Mangala Devi Temple, Chellarkovil, Vandiperiyar and Vandanmedu.

Morning breakfast with Appam with chicken stew and mutton stew, Carrot Soup. Appam are soft centered pancakes made out of rice and coconut milk. Appam is usually served with the Kerala chicken stew and mutton stew.
Afternoon breakfast: Moppilah Biriyani, Pavaka Peerapattichatu, Meen Pattichatu, Inji Kari, Garlic Chicken Soup.

04: Periyar - Alleppey
After breakfast, check out and proceed to Alleppey. Allapuzha (Alleppey) has grown in importance as a backwater tourist centre, attracting several thousands of foreign tourists each year. Allapuzha is also famous for its boat races, houseboat holidays, beaches, marine products and coir industry. Your houseboat crew will take care of your every need, cook you delicious Kerala food and show you the places of interest on route. A singular characteristic of this land is the region called Kuttanad. A land of lush paddy fields, Kuttanad is called the Rice Bowl of Kerala and is one of the few places in the world where farming is done below sea level. On arrival in Alleppey, embark the luxurious houseboat for an overnight cruise along the tranquil Kerala backwaters towards Kumarakom.

Todays morning breakfast is Iddiappams with sweet coconut milk and vegetable stew, Iddiappams are very similar to Appams, made with rice flour. The noodle like rice cake dish is usually served with sweet coconut milk and vegetable stew.

Situated on the Vembanad Lake, in this small water world you'll come across plenty of traditional country crafts, boats and canoes that will take you into the heart of the scenic lake. Visit to Kumarakom bird sanctuary: 15kms from kottayam, Bharananganam: The Church here is another important pilgrim centre in Kerala. The mortal remains of the Blessed Sr. Alphonsa is laid to rest here and also visit Thrikodithanam Temple, Changanacherry and Ettumanoor - Siva temple.

Breakfast Tapioca and Fish Curry
It is a sumptuous and mouthwatering delicacy. It is a combination of 'Kappa' and 'Meen curry'. The delicious fish curry is made with garlic paste, onions and red chilies and seasoned with mustard seeds and curry leaves.
Afternoon Breakfast is Kerala Fish Curry, Nethily Fish Curry, Roasted King Fish, chicken Briyani, Pachhady.
Day 06: Kumarakom - Cochin
After a leisurely morning breakfast traditional Kerala idly or dosa served with sambar and chutney, check out and proceed to Cochin.
